Do you love the idea of tofu, but get stuck when trying to plan how to prepare it? Here at BumbleBar, we love plant-based sources of protein, so we wanted to explore some creative tofu recipes to see how many ways we could eat this versatile food. There are so many ways to make tofu, but we started by making Almond Crusted Tofu Nuggets with Lime Avocado Dip and we’re pretty glad we did. Want to make it too? Follow along!
What you’ll need:
- 16oz package extra firm tofu
- 2 Tbsp olive oil
- 2 Tbsp soy sauce
- 1 egg
- 3 tsp minced garlic
- 1/4 cup flour
- 1 cup almonds
- 1 Tbsp nutritional yeast
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp pepper
- 1 avocado
- 1/2 cup plain Greek yogurt
- 1 lime
Prepare the Tofu
Take the tofu out of its package and dab with paper towels until the block isn’t dripping from the water in the container. Cut the block into your preferred nugget sized pieces and place them in a container to prepare for the marinade.
Mix the olive oil, soy sauce, and one tsp of the minced garlic together and pour the mixture over the tofu blocks in your container. Cover the tofu and let it sit in the fridge for no less than half an hour, flipping it over half way through so the marinade can do its job to all of the tofu.
Mix the Almond Breading
To grind the almonds into bits, either throw them into a food processor or chop them by hand (though we recommend the food processor unless you’re looking for a forearm workout). Mix the ground almonds in a bowl with the yeast, salt, paprika, and pepper.
And They Come Together
Put the flour into a bowl, mix the egg in a second bowl, and bring both to the breading you prepared to set up your dipping station. Pull out a baking sheet and line it with wax paper or foil (optional). Grab the tofu from the fridge and dip each piece in the flour, then the egg, and then the almond breading before placing it on the baking sheet. Once you coat all of the nuggets, pop the baking sheet in the oven at 400 degrees for 12 minutes. Flip them halfway through for even crispiness.
Prepare the Dipping Sauce
While you wait for the nuggets to bake, combine the avocado, Greek yogurt, two tsp of garlic, and juice from the lime. Add a dash of salt and pepper and mix. If you used a food processor to break down the almonds, we recommend using it again to mix this sauce.
Of course, the sauce is optional, and you may choose to go classic with some ketchup, but we highly recommend this dip. It’s so tasty and made the recipe for us!
