Make a BumbleBar into a Smoothie

We’re not sure how hot it is in your part of the country or the world, but here in Spokane, Washington, it’s been in the mid-90s for the past couple of weeks. The heat sits on you like a heavy blanket you just can’t kick off. The best relief for us here at BumbleBar is to go jump into one of the numerous lakes in our region. Making a cold drink proves to be another great option.

We grabbed a Mixed Nut Medley BumbleBar and blended it into a smoothie for a nutty-meets-fruity, refreshing beverage.

Eating a BumbleBar is a tasty way to stay fueled, but in the intense heat of summer, you might want something colder and more drinkable. You can use a BumbleBar to add seeds, nuts, and spices to your smoothie and give your drink a bold taste.

We used beet greens (Yes, you can eat those!) and rhubarb grown at Urban Eden Farm, a Spokane farm located ridiculously close to the city’s downtown. There’s nothing quite like fresh farm vegetables in the summer! If you don’t want to use beet greens, lots of other greens like kale or spinach will work.

The banana, strawberry, and rhubarb are frozen to make sure the smoothie is icy cold. Tear up the greens and smush them to the bottom and layer the fruit on top.

Break the BumbleBar into pieces to give your blender a little assist. Add a scoop of cashew butter (or almond butter) on top for extra creaminess. Pour in your favorite nut or seed milk. We used almond milk, but we’re also big fans of flaxseed milk.

Don’t forget to use an eco-friendly straw, like this stainless steel one! The sesame seeds, almonds, and cashews create a nice and filling texture for the smoothie. The cinnamon and vanilla round out the flavor and marries the nuts, fruits, and veg with perfection!
